Cooking Instructions

  1. 1

    Prepare the Mashed Potatoes

Peel and chop the potatoes, then boil them in salted water until tender. Drain and mash with butter, salt, and pepper to taste.

  2. 2

    Sauté the Spinach

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Add the spinach and cook until wilted. Season with salt and pepper.

  3. 3

    Roast the Artichokes

Preheat the oven to 400°F (200°C). Toss artichoke hearts with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 15-20 minutes until golden.

  4. 4

    Cook the Swordfish

Season the swordfish steaks with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the swordfish for 4-5 minutes on each side until cooked through and golden brown.

  5. 5

Make the Caper Lemon Butter Sauce

In a small saucepan, melt the butter over medium heat. Add capers and lemon juice, and simmer for 2-3 minutes until combined.

  6. 6

    Plate the Dish

On each plate, place a serving of mashed potatoes, sautéed spinach, and roasted artichokes. Top with the pan-seared swordfish and drizzle with caper lemon butter sauce.
