Fry the Leeks
In a separate pan, heat oil over medium heat. Add sliced leeks and fry until golden brown and crispy. Drain on paper towels and season with a pinch of salt.

Make the Cream Sauce
In a saucepan, heat heavy cream over medium heat. Stir in grated Pecorino cheese and black pepper until smooth and thickened. Adjust seasoning with salt as needed.

Fry the French Fries
Fry the French fries according to package instructions or until golden and crispy. Season with salt.

Serve
Slice the steak and place it on a plate. Serve with a generous portion of French fries on the side, topped with the fried leeks and drizzled with Pecorino cream sauce.
