    In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat to low and let it simmer until it thickens, about 15-20 minutes. Stir occasionally to prevent burning. Set aside.

    In a large pot, bring salted water to a boil. Add salt water potatoes and cook until fork-tender, about 15 minutes. Drain and let them cool slightly. Slice them into thick wedges.

    Crisp the Potatoes

    Heat olive oil in a large skillet over medium-high heat. Add the potato wedges and season with salt, black pepper, and garlic powder. Cook until crispy and golden brown on all sides, about 8-10 minutes. Remove from skillet and set aside.
