    Prepare the Tofu

    Press the firm tofu to remove excess moisture. Cut it into cubes.

    Chop the Vegetables

    Wash and chop the carrots, bell pepper, zucchini, and broccoli into bite-sized pieces.

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Peel the garlic cloves, drizzle with olive oil, and wrap them in aluminum foil. Roast for about 20 minutes until soft.

    Sauté the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped carrots, bell pepper, and zucchini. Sauté for 5-7 minutes until they start to soften.

    Add Broccoli and Tofu

    Add the broccoli florets and tofu cubes to the pot. Stir to mix well.

    Add Broth and Seasonings

    Pour in the vegetable broth and add soy sauce, salt, black pepper, and red pepper flakes. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld.

    Finish with Garlic and Herbs

    After roasting, add the garlic cloves to the soup, mashing them slightly. Stir in chopped green onions and cilantro just before serving.
