Dumpling Dough Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing to form a soft dough. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a large bowl, mix minced chicken, chopped cabbage, grated carrot, green onions, soy sauce, minced ginger, minced garlic, and sesame oil. Stir well until all ingredients are evenly combined.
Dumpling Assembly

Form the Dumplings
After the dough has rested, divide it into small balls. Roll each ball into a thin circle about 3 inches in diameter. Place a tablespoon of filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
Cooking

Steam the Dumplings
Prepare a steamer pot with water and bring it to a boil. Arrange dumplings in the steamer basket, making sure they don’t touch. Steam for about 15-20 minutes until the dumplings are cooked through and the dough is translucent.

In a small bowl, combine soy sauce, rice vinegar, sugar, and chili oil. Stir until the sugar is dissolved. Adjust the chili oil to taste.
