Prepare the Chicken
Cut the chicken breast into bite-sized pieces and set aside.

Prepare the Aromatics
Chop the lemongrass into 1-inch pieces and bruise them lightly with a knife to release their flavor. Slice the green onions and set both aside.

Start the Broth
In a large pot, bring the chicken broth to a boil over medium-high heat.

Add the Aromatics
Once the broth is boiling, add the chopped lemongrass, kaffir lime leaves, and sliced chili paste. Allow to simmer for about 5 minutes to infuse flavors.

Cook the Chicken
Add the bite-sized chicken pieces to the pot and cook for about 5-7 minutes, or until the chicken is cooked through.

Add Mushrooms and Seasoning
Stir in the sliced mushrooms, fish sauce, lime juice, and chili paste. Let it cook for another 3-5 minutes until the mushrooms are tender.

Finish with Fresh Ingredients
Remove the pot from heat. Stir in the sliced green onions and chopped cilantro. Adjust seasoning with more fish sauce or lime juice if needed.

Ladle the soup into bowls, garnish with sliced red chili peppers if desired, and serve hot.
