Preparation

    Prepare all the ingredients: Cook the rice if not already done, and let it cool. Dice the chicken breast and peel the shrimp if using. Slice the white onion, bell pepper, fresh chili, and mince the garlic.

Cooking

    Heat the Wok

    Place a large wok or skillet over medium-high heat. Add a tablespoon of oil and allow it to heat up.

    Cook the Meat

    Add the diced chicken breast (or shrimp) to the wok. Stir-fry until the meat is cooked through, about 5-7 minutes. Remove the meat from the wok and set it aside.

    Sauté the Vegetables

    In the same wok, add another tablespoon of oil. Add the sliced white onion, bell pepper, minced garlic, and sliced chili. Stir-fry for about 3-4 minutes until the vegetables are tender and fragrant.

    Add the Rice

    Add the cooked rice to the wok. Stir well to combine with the vegetables. Break up any clumps of rice.

    Season the Rice

    Pour in the soy sauce, oyster sauce, and sesame oil. Stir to evenly coat the rice. Add the cooked meat back into the wok, mixing everything together.

    Finish with Basil

    Add the fresh basil leaves and stir-fry for an additional 2 minutes until the basil is wilted and fragrant.

    Adjust Seasoning

    Taste the fried rice and add salt and black pepper to taste if necessary.

Serving

    Serve the spicy fried rice hot, garnished with sliced green onions and lime wedges on the side.
