Preparation

    Prepare the meat

    Cut the chicken breast and pork tenderloin into bite-sized pieces. Season lightly with salt and pepper.

    Chop the vegetables

    Dice the eggplants, red bell pepper, and green bell pepper into similar-sized pieces. Mince the garlic cloves and set aside.

    Prep the basil

    Wash the fresh basil leaves and pat them dry.

Cooking

    Heat the oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Cook the meat

    Add the chicken and pork to the skillet. Stir-fry for about 5-7 minutes until the meat is cooked through and browned.

    Add garlic and vegetables

    Stir in the minced garlic and cook for 1 minute until fragrant. Then, add the diced eggplants, red bell pepper, and green bell pepper. Stir-fry for an additional 5 minutes until the vegetables are tender.

    Add sauce and basil

    Pour in the soy sauce and sprinkle the chili flakes over the mixture. Toss to combine. Finally, add the fresh basil leaves and stir-fry for another 2 minutes until the basil wilts.

    Remove from heat and serve hot over rice or noodles, if desired.
