Prepare Spare Ribs

Marinate the Ribs
In a large bowl, combine the BBQ sauce, curry powder, soy sauce, minced garlic, minced ginger, and vegetable oil. Mix well. Add the spare ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Grill the Ribs
Preheat your grill to medium-high heat. Remove the ribs from the marinade and discard the excess marinade. Grill the ribs for about 4-5 minutes on each side, until they are charred and cooked through. Remove from the grill and let rest for 10 minutes before chopping into bite-sized pieces.
Prepare Fried Rice

Combine with Ribs
Add the chopped grilled spare ribs to the fried rice and mix well. Cook for an additional minute to warm the ribs through.

Garnish and Serve
Remove the fried rice from heat. Garnish with chopped green onions and serve hot, drizzled with extra BBQ sauce if desired.
