Method

Salad Preparation

    Prepare the Vegetables

    Wash and chop the cucumber, red bell pepper, and carrot into bite-sized pieces. Halve the cherry tomatoes and tear the lettuce into smaller pieces.

    Assemble the Salad

    In a large bowl, combine the chopped cucumber, red bell pepper, carrot, cherry tomatoes, and lettuce. Toss gently to mix.

Tofu and Egg Preparation

    Fry the Tofu

    Cut the firm tofu into cubes. Heat a non-stick pan over medium heat and add a little oil. Fry the tofu cubes until golden brown on all sides, about 8-10 minutes. Remove from heat and set aside.

    Prepare Hard-Boiled Eggs

    Boil water in a pot and gently add the eggs. Boil for 9-12 minutes, then transfer to an ice bath to cool. Once cool, peel and slice the eggs in half.

Thai Peanut Sauce Preparation

    Make the Sauce

    In a bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, water, and minced garlic until smooth and well combined.

Final Assembly

    Combine and Serve

    Top the assembled salad with the fried tofu, halved hard-boiled eggs, and potato chips. Drizzle with the Thai peanut sauce. Serve immediately and enjoy!
