Preparation

Soak the Noodles
Place the flat rice noodles in a bowl and soak them in hot water for about 30 minutes, or until they are soft but not mushy. Drain and set aside.

Prepare the Chicken
Slice the chicken breast thinly and season with salt and pepper. Set aside.

Prep the Vegetables
Slice the green onions and rinse the bean sprouts under cold water. Set both aside.

Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Remove the eggs from the skillet and set aside.

Stir-Fry the Chicken
In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.

Add Noodles and Sauces
Add the drained flat rice noodles to the skillet with the chicken. Pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine everything evenly.

Add the bean sprouts and sliced green onions to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender but still crisp.
