Shrimp Marinade

Prepare the Shrimp
In a bowl, combine the minced garlic, lemon juice, soy sauce, cornstarch, salt, and black pepper. Add the shrimp and toss to coat. Let marinate for at least 30 minutes.
Batter and Frying

Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and cold water until a smooth batter forms.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until hot.

Fry the Shrimp
Dip each marinated shrimp into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Sweet and Sour Chili Sauce

Make the Sauce
In a saucepan, combine sugar, rice vinegar, ketchup, chili flakes, minced garlic, and water. Bring to a boil, then reduce heat and let simmer for about 10 minutes until slightly thickened.

Prepare the Basil
In a small skillet, lightly fry the fresh basil leaves in a little oil until crisp, about 1-2 minutes. Remove and set aside.

Arrange the fried shrimp on a serving platter, drizzle with the sweet and sour chili sauce, and top with crispy basil leaves. Enjoy!
