Preparation of Homemade Red Chili Paste

    Prepare the Chili Paste

    Soak the dried red chilies in warm water for about 15 minutes until softened. Drain and place them in a blender with garlic, ginger, shallots, lemon juice, and salt. Blend until a smooth paste forms. Set aside.

Cooking the Curry

    Cook the Chicken

    In a large pot, heat vegetable oil over medium heat. Add the chicken breast, cut into bite-sized pieces, and sauté until browned, about 5-7 minutes.

    Add the Chili Paste

    Stir in the homemade red chili paste and cook for an additional 2-3 minutes, allowing the flavors to meld.

    Incorporate Coconut Milk

    Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

    Add Vegetables

    Chop the zucchini, Chinese eggplants, and bell pepper into bite-sized pieces. Add these vegetables to the pot and continue to simmer for 10-15 minutes, or until the vegetables are tender.
