Preparing the Curry Paste

    Soak the Dried Chilies

    Soak the dried red chilies in warm water for about 20 minutes until softened. Drain and set aside.

    Make the Paste

    In a blender or food processor, combine the soaked chilies, shallots, garlic, galangal, lemongrass, shrimp paste, and palm sugar. Blend until you achieve a smooth paste. Add a little water if necessary to facilitate blending.

Cooking the Curry

    Heat the Oil

    In a large pot or wok, heat the vegetable oil over medium heat.

    Cook the Curry Paste

    Add the curry paste to the pot and sauté for about 5-7 minutes until fragrant and the oil starts to separate from the paste.

    Add Coconut Milk

    Pour in the coconut milk and stir well to combine with the curry paste. Bring to a simmer.

    Add Duck and Vegetables

    Add the chopped roasted duck, tomatoes, pineapple, and bell peppers to the pot. Stir to coat everything in the curry sauce.

    Add Kaffir Leaves

    Tear the kaffir lime leaves into smaller pieces and add them to the pot. Simmer for another 10-15 minutes until everything is heated through and the flavors meld.

    Season to Taste

    Taste the curry and add salt as needed to suit your preference.
