    Cook the Rice

    Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions. Once done, fluff with a fork and allow it to cool.

    Prepare the Ingredients

    Dice the chicken (if using), white onion, and pineapple. Slice the scallions and set everything aside.

    Beat the Eggs

    In a bowl, crack the eggs and beat them until well combined. Set aside.

Cooking

    Heat the Oil

    In a large wok or frying pan, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Chicken

    Add the diced chicken (if using) to the hot oil. Stir-fry for 3-5 minutes or until fully cooked. Remove from the pan and set aside.

    Scramble the Eggs

    In the same pan, pour in the beaten eggs. Stir quickly to scramble until just set, then remove and set aside.

    Sauté the Vegetables

    Add the diced white onion to the pan and cook for 2-3 minutes until it becomes translucent.

    Combine Ingredients

    Add the cooked rice, chicken, scrambled eggs, diced pineapple, cashew nuts, and raisins to the pan. Pour in the soy sauce and stir to combine all ingredients evenly.

    Final Touches

    Season with salt and pepper to taste. Top with sliced scallions and stir-fry for another 2-3 minutes until everything is heated through.
