Roast the Aromatics
Begin by preheating your oven to 400°F (200°C). Place the ginger and onion on a baking sheet and roast for about 15-20 minutes until slightly charred.

Simmer the Broth
Let the broth simmer for about 1.5 to 2 hours. After simmering, strain the broth through a fine-mesh sieve to remove solids. Return the clear broth to the pot.

Season the Broth
Stir in fish sauce and salt to taste. Keep the broth warm on low heat.
Noodle and Topping Preparation

Cook the Rice Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions (usually about 4-5 minutes). Once cooked, drain and rinse under cold water to stop cooking.

Prepare Toppings
While the noodles are cooking, rinse the bean sprouts under cold water. Chop the green onions and cut the lime into wedges.

Serve the Pho
In a bowl, place a serving of rice noodles. Pour hot broth over the noodles. Top with bean sprouts, Thai basil, and green onions. Squeeze lime juice over the top to enhance flavor. Enjoy your homemade Pho!
