Soak Glass Noodles
In a large bowl, soak the glass noodles in hot water for about 20 minutes or until softened. Drain and set aside.

Prepare Vegetables
While the noodles are soaking, prepare the vegetables. Slice the cabbage, white onions, and tomatoes. Slice the black mushrooms, chop the green onions and cilantro, and mince the roasted garlic.

Prepare Meat
If using, slice the chicken breast and peel and devein the shrimp.

Stir-fry the Meat
In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and shrimp, cooking until they are fully cooked, about 5-7 minutes. Remove from the wok and set aside.

Cook the Vegetables
In the same wok, add another tablespoon of vegetable oil. Add the white onions and sauté for 2 minutes until translucent. Then add the shredded cabbage, black mushrooms, and diced tomatoes, stir-frying for an additional 3-4 minutes.

Add Noodles and Sauce
Add the soaked glass noodles to the wok with the vegetables, followed by the cooked meat. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and white pepper. Pour the sauce over the noodle mixture, tossing well to combine and heat through, about 2-3 minutes.

Finish and Serve
Add the chopped green onions, cilantro, and roasted garlic. Toss everything together for a minute. Serve hot and enjoy!
