Preparation

    Soak the Noodles

    Place the flat rice noodles in a bowl and cover with hot water. Let them soak for about 30 minutes until soft. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, dark soy sauce, sugar, oyster sauce, and white pepper. Set aside.

Cooking

    Scramble the Eggs

    In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan, scramble until fully cooked, then remove from the pan and set aside.

    Stir-Fry the Meat

    Add another tablespoon of vegetable oil to the wok. Add the sliced chicken and shrimp. Stir-fry for about 3-4 minutes until cooked through. Remove from the pan and set aside.

    Cook the Vegetables

    Add the remaining tablespoon of oil to the pan. Sauté the minced garlic for about 30 seconds until fragrant. Add the broccoli florets and stir-fry for about 2-3 minutes until tender-crisp.

    Combine Ingredients

    Add the soaked noodles back into the pan along with the cooked meat. Pour the sauce over the noodles and stir-fry everything together for another 2-3 minutes, making sure the noodles are coated evenly.

    Add Scrambled Eggs

    Finally, add the scrambled eggs back into the pan and toss everything together gently. Cook for an additional minute to heat through.
