Make the Massaman Paste
In a blender or food processor, combine the toasted spices, galangal, lemongrass, and salt. Blend until a smooth paste forms, adding a little water if necessary.

Brown the Meat
Heat vegetable oil in a large pot over medium-high heat. Add your choice of chicken or beef and brown on all sides (about 5-7 minutes). Remove the meat and set aside.

Combine Ingredients
Return the browned meat to the pot. Add coconut milk, potatoes, and kaffir lime leaves. Stir well to combine all the ingredients.

Simmer the Curry
Bring the mixture to a gentle boil, then reduce heat and let it simmer for 30-40 minutes, or until the meat is tender and the potatoes are cooked through.

Add Bell Peppers
In the last 10 minutes of cooking, add the sliced bell pepper to the curry, allowing it to cook slightly without losing its crunch.

Serve the massaman curry hot, garnished with chopped fresh cilantro and lime wedges on the side.
