Prepare the Meat
Cut the chicken breast and beef sirloin into thin strips, approximately 1 inch long.

Slice the Vegetables
Thinly slice the fresh ginger, white onion, black mushrooms, red bell pepper, and green bell pepper.
Cooking

Marinate the Meat
In a bowl, mix the meat strips with cornstarch, a pinch of salt, and black pepper. Let it marinate for 15 minutes.

Heat the Oil
In a large frying pan or wok, heat the sesame oil over medium-high heat.

Cook the Vegetables
In the same pan, add a little more oil if needed, and stir-fry the sliced ginger, white onion, black mushrooms, red bell pepper, and green bell pepper for about 5 minutes until they are tender-crisp.

Combine and Sauce
Return the cooked meat to the pan with the vegetables. Pour in the light soy sauce and water, stir well to combine, and cook for another 2-3 minutes.

Final Seasoning
Taste and adjust seasoning with salt and black pepper as needed. Stir-fry for an additional minute.
