Preparing the Tofu

    Pressing the Tofu

    Begin by draining the firm tofu. Wrap the tofu block in a clean kitchen towel and place a heavy object on top (like a skillet) to press out excess moisture. Let it sit for about 15-20 minutes.

    Cutting the Tofu

    Once pressed, cut the tofu into bite-sized cubes or triangles, depending on your preference.

    Coating the Tofu

    In a shallow dish, add the cornstarch. Coat each tofu piece evenly with cornstarch, ensuring they are well covered.

Frying the Tofu

    Heating the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it's hot but not smoking (about 350°F or 175°C).

    Frying the Tofu

    Carefully add the coated tofu pieces to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the tofu and place it on a paper towel-lined plate to drain excess oil.

Making the Dipping Sauce

    Mixing the Sauce

    In a medium bowl, combine the ketchup, rice vinegar, soy sauce, brown sugar, pineapple juice, minced garlic, minced ginger, red pepper flakes, and sesame oil. Whisk together until well mixed.

    Serving

    Serve the fried tofu hot with the sweet and sour dipping sauce on the side for dipping.
