Preparation

    Prepare the Vegetables

    Slice the white onion into thin rings. Chop the Chinese celery into small pieces. Cut the bell pepper into thin strips. Chop the scallions, separating the white parts from the green parts.

    Prepare the Salmon

    Cut the salmon fillets into bite-sized pieces. Season with salt and black pepper. Set aside.

    Prepare the Egg

    In a bowl, beat the eggs lightly and set aside.

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Stir-Fry the Onions

    Add the sliced white onions to the hot oil and stir-fry for about 2 minutes until they become translucent.

    Cook the Salmon

    Add the seasoned salmon pieces to the skillet and cook for about 3-4 minutes until they are lightly browned and just cooked through.

    Add Vegetables and Curry Powder

    Add the chopped Chinese celery, bell peppers, and the white parts of the scallions to the skillet. Sprinkle in the yellow curry powder and stir well to combine. Cook for another 2-3 minutes.

    Add Egg and Soy Sauce

    Push the mixture to one side of the skillet, pour the beaten eggs into the other side, and allow them to scramble. Once scrambled, mix everything together. Drizzle the light soy sauce over the mixture and stir well to combine.

    Finish and Serve

    Cook for an additional 1-2 minutes until everything is heated through. Adjust seasoning with salt and black pepper if necessary. Garnish with the green parts of the scallions before serving.
