Prepare the Vegetables
Slice the white onion into thin rings. Chop the Chinese celery into small pieces. Cut the bell pepper into thin strips. Chop the scallions, separating the white parts from the green parts.

Prepare the Salmon
Cut the salmon fillets into bite-sized pieces. Season with salt and black pepper. Set aside.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Stir-Fry the Onions
Add the sliced white onions to the hot oil and stir-fry for about 2 minutes until they become translucent.

Add the seasoned salmon pieces to the skillet and cook for about 3-4 minutes until they are lightly browned and just cooked through.

Add Vegetables and Curry Powder
Add the chopped Chinese celery, bell peppers, and the white parts of the scallions to the skillet. Sprinkle in the yellow curry powder and stir well to combine. Cook for another 2-3 minutes.

Cook for an additional 1-2 minutes until everything is heated through. Adjust seasoning with salt and black pepper if necessary. Garnish with the green parts of the scallions before serving.
