Marinating the Fish

    Prepare the Marinade

    In a mixing bowl, combine lemon juice, minced garlic, minced ginger, salt, and black pepper.

    Marinate the Fish

    Place the fish fillets in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Preparing the Batter

    Mix the Batter

    In a bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and cold water until smooth.

Making the Sweet & Sour Chili Sauce

    Combine Ingredients

    In a saucepan, mix sugar, rice vinegar, soy sauce, chili flakes, and water. Heat over medium heat until the sugar dissolves.

    Thicken the Sauce

    In a small bowl, mix cornstarch with a little water to create a slurry. Stir it into the saucepan and cook until the sauce thickens. Add sesame oil and mix well.

Frying the Fish

    Heat the Oil

    In a large deep frying pan, heat vegetable oil over medium-high heat until hot.

    Fry the Fish

    Dip each marinated fish fillet into the batter, allowing excess to drip off. Carefully place the fillet into the hot oil. Fry until golden brown and crispy, about 5-7 minutes per side. Remove and drain on paper towels.

    Drizzle the sweet and sour chili sauce over the fried fish or serve on the side for dipping. Enjoy!
