Fish Cakes

    Prepare the Fish

    In a food processor, add the white fish fillets and pulse until finely minced.

    Mix Ingredients

    In a large bowl, combine the minced fish, Thai red curry paste, fresh coriander, chopped green beans, egg, rice flour, salt, and black pepper. Mix until well combined.

    Form Cakes

    Using wet hands, form the mixture into small patties, about 2 inches in diameter.

    Heat Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Cakes

    Carefully place the fish cakes in the hot oil and fry for 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Sweet & Sour Sauce

    Mix Sauce Ingredients

    In a saucepan, combine sugar, vinegar, ketchup, soy sauce, and chili flakes. Stir well.

    Cook Sauce

    Place the saucepan over medium heat and bring to a simmer. Cook for 5 minutes, stirring occasionally until the sugar is dissolved and the sauce thickens slightly. Remove from heat and let cool.

Cucumber Salad

    Prepare the Salad

    In a bowl, combine the thinly sliced cucumber, red onion, and fresh coriander leaves.

    Dress the Salad

    Drizzle with lime juice and season with salt to taste. Toss to combine and let sit for 10 minutes before serving.
