Method

Filet Mignon Satay

    Prepare the Marinade

    In a mixing bowl, combine the coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, and lime juice. Whisk until well combined.

    Marinate the Filet Mignon

    Cut the filet mignon into 1-inch cubes and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

    Skewering the Meat

    Remove the filet mignon from the marinade and thread the cubes onto the skewers. Discard the marinade.

    Grill the Skewers

    Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the meat reaches your desired level of doneness.

Thai Peanut Sauce

    Prepare the Sauce

    In a small saucepan over low heat, combine the peanut butter, coconut milk, soy sauce, brown sugar, sriracha sauce, lime juice, and water. Stir continuously until the mixture is smooth and heated through. Remove from heat and set aside.

Cucumber Salad

    Prepare the Salad

    In a bowl, combine the sliced cucumber and thinly sliced red onion. In a separate small bowl, whisk together the rice vinegar, sugar, salt, and sesame oil. Pour the dressing over the cucumber mixture and toss gently to combine.

    Garnish

    Sprinkle the chopped cilantro over the salad before serving.

    Arrange the skewers on a serving platter alongside the Thai peanut sauce and cucumber salad. Serve immediately.
