Method

Preparation

  1. 1

    Prepare the seafood

Clean and slice the fish fillets, scallops, shrimp, and squid into bite-sized pieces. Pat dry with paper towels to remove excess moisture.

  2. 2

    Prepare the vegetables

Slice the chili peppers, onion, and sweet bell pepper. Mince the garlic and set aside.

Cooking

  1. 3

    Heat the oil

In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.

  2. 4

    Sauté the aromatics

Add the minced garlic, sliced chili, and onion to the skillet. Stir-fry for about 1-2 minutes until fragrant and the onions are translucent.

  3. 5

    Add the seafood

Add the fish, scallops, shrimp, and squid to the skillet. Stir-fry for 3-5 minutes until the seafood is just cooked through.

  4. 6

    Add the peppers and seasoning

Add the sliced sweet bell pepper, crushed black peppercorns, and soy sauce. Stir-fry for another 2-3 minutes until the vegetables are tender yet crisp.

  5. 7

    Add the basil

Toss in the fresh basil leaves and mix well. Cook for an additional minute to allow the flavors to meld.

Serving

  1. 8

    Plate the dish

Remove the stir-fry from heat and serve immediately on a plate. Garnish with additional basil leaves if desired.
