Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Breading
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari
Dip each calamari ring into the wet mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated.
Frying

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in small batches, making sure not to overcrowd the pot. Fry for 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Remove the fried calamari from the oil and place them on a plate lined with paper towels to absorb excess oil.
Sweet & Sour Chili Sauce Preparation

Combine Ingredients
In a saucepan, combine ketchup, rice vinegar, soy sauce, sugar, chili flakes, garlic powder, and water.

Simmer the Sauce
Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes until slightly thickened.

Cool the Sauce
Remove from heat and let the sweet and sour chili sauce cool before serving.
Serving

Plate the Calamari
Serve the crispy fried calamari hot, with the sweet and sour chili sauce on the side for dipping.
