In a large bowl, toss the chicken wings with salt and black pepper. Allow to marinate for 30 minutes.

In another bowl, mix the all-purpose flour and cornstarch together. Dredge each marinated chicken wing in the flour mixture, ensuring an even coating.

Heat the vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the coated chicken wings in batches. Fry until golden brown and crispy, about 10-12 minutes. Drain on paper towels.
Making Ka Prao Sauce

In a large skillet over medium heat, add a tablespoon of oil. Sauté the minced garlic and chopped bird's eye chilies until fragrant, about 1 minute.

Stir in the soy sauce, oyster sauce, and sugar. Mix well and let the sauce simmer for 2-3 minutes.
