    Prepare the Meat

    Choose your preferred meat (chicken, beef, or shrimp) and cut it into bite-sized pieces.

    Prep the Vegetables

    Wash and chop the bok choy into halves or quarters. Mince the garlic cloves, and slice the bell pepper and carrot into thin strips.

    Make the Sauce

    In a small bowl, mix the soy sauce, sesame oil, cornstarch, and water until well combined. Set aside.

Cooking

    Stir-fry the Meat

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the meat and stir-fry for 4-5 minutes until cooked through. Remove the meat from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add a little more oil if needed. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then, add in the bok choy, bell pepper, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.

    Combine and Finish

    Return the cooked meat to the skillet and pour the sauce over the mixture. Stir everything together and cook for another 2-3 minutes until the sauce thickens and everything is well coated.

    Season and Serve

    Season with salt and black pepper to taste. Serve hot over rice or noodles if desired.
