Prepare the Filling

Rehydrate the Mushrooms
Soak the dried black mushrooms in warm water for about 20 minutes until they soften. Drain and chop finely.

Cook the Glass Noodles
Boil the glass noodles according to the package instructions. Drain, rinse under cold water, and chop into small pieces.

Mix the Filling
In a large bowl, combine the ground chicken, chopped mushrooms, onion, carrot, glass noodles, soy sauce, sesame oil, salt, and black pepper. Mix well until thoroughly combined.

Remove the tips of the chicken wings and carefully make a slit along the bone to create a pocket for stuffing.

Stuff the Wings
Fill each chicken wing pocket with the prepared filling, ensuring not to overstuff. Press the openings to seal.

Prepare the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, and salt. Gradually whisk in cold water until you achieve a smooth batter.

Heat the Oil
In a deep frying pan, heat oil over medium-high heat until it reaches about 180°C (350°F).

Fry the Wings
Dip each stuffed chicken wing into the batter, allowing excess to drip off. Carefully place the wings in the hot oil and fry in batches for about 8-10 minutes or until golden brown and cooked through. Drain on paper towels.
