Peel and cut the yams into thick slices or wedges.

Place the yam slices in a pot of boiling water and cook for about 10-15 minutes until they are tender but not falling apart. Drain and set aside.

In a large bowl, mix together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.

Coat the Chicken
Dip each chicken piece into the egg wash, allowing excess to drip off, then coat thoroughly with the flour mixture. Place coated chicken on a tray.

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot (around 350°F or 180°C).
