    Peel and cut the yams into thick slices or wedges.

    Place the yam slices in a pot of boiling water and cook for about 10-15 minutes until they are tender but not falling apart. Drain and set aside.

    In a large bowl, mix together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.
