Preparation of Potatoes

    Peel and Grate Potatoes

    Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

    Season the Potatoes

    In a large mixing bowl, combine the grated potatoes with salt and black pepper. Mix well to evenly distribute the seasoning.

Cooking the Rosti

    Heat the Oil

    In a large non-stick skillet, heat 1/2 cup of olive oil over medium heat until shimmering.

    Form the Rosti

    Add the seasoned grated potatoes to the skillet and press down evenly to form a large pancake. Cook for 10-15 minutes until the bottom is golden brown.

    Add Fillings

    Carefully flip the rosti over. Add your choice of fillings (cheddar cheese, cooked bacon, green onions, bell peppers, and mushrooms) evenly over the top. Press down gently to secure.

    Finish Cooking

    Drizzle the remaining olive oil around the edges of the rosti and cook for another 10-15 minutes until the other side is also golden brown and the cheese is melted.

Serving

    Slice and Serve

    Once cooked, carefully slide the rosti onto a large serving plate. Cut into wedges and serve hot with your favorite dipping sauce or sour cream.
