Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 200°C (390°F) to ensure it's ready for baking the cakes.

  2. 2

    Prepare the ramekins

Grease four ramekins with butter and dust them lightly with flour to prevent sticking.

Making the Cake Batter

  1. 3

    Melt chocolate and butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short bursts, stirring until smooth.

  2. 4

    Mix sugar and eggs

In a separate bowl, whisk together the granulated sugar, large eggs, egg yolk, vanilla extract, and a pinch of salt until well combined.

  3. 5

    Combine mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to prevent the eggs from cooking.

  4. 6

    Add flour

Sift the all-purpose flour into the chocolate mixture and gently fold until just combined. Be careful not to overmix.

Baking the Cakes

  1. 7

    Fill ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 9

    Cool slightly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

  4. 10

    Invert and serve

Carefully run a knife around the edges of each ramekin and invert onto individual plates. Serve immediately with vanilla ice cream and a dusting of powdered sugar.
