Preparation

  1. 1

    Prepare the Meat

In a large pot, add the chicken, pork ribs, and beef stew meat. Season with salt, black pepper, cumin, and oregano. Cover with water (about 3 liters) and bring to a boil over high heat.

  2. 2

    Cook the Meat

Once boiling, lower the heat to medium and simmer for about 30 minutes, skimming off any foam that rises to the surface.

Cooking

  1. 3

    Add Vegetables

After 30 minutes, add the yuca, plantains, corn, carrots, and potatoes to the pot. Stir well to combine.

  2. 4

    Flavor the Broth

Add the chopped onion, minced garlic, green bell pepper, and bay leaves. Continue to simmer for another 30 minutes, or until the vegetables are tender.

  3. 5

    Final Seasoning

Taste the broth and adjust the seasoning with additional salt and pepper if necessary. Add the chopped cilantro and stir.

Serving

  1. 6

    Serve the Sancocho

Ladle the Sancocho into bowls and serve hot. Enjoy with avocado slices and a side of rice if desired.
