    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

    Season the Potatoes

    In a large mixing bowl, combine the grated potatoes with salt and black pepper. Mix well to ensure the seasoning is evenly distributed.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Form the Rosti

    Add the seasoned grated potatoes to the skillet, pressing them down firmly into an even layer. If using fillings, sprinkle the cheese, bacon or sausage, green onions, and bell peppers evenly over one half of the potato layer.

    Cook the Rosti

    Cook the potato mixture for about 10-12 minutes, until the bottom is golden brown and crispy. Use a spatula to check the underside.

    Flip the Rosti

    Carefully place a large plate over the skillet and invert the rosti onto the plate. Add a bit more olive oil to the skillet and slide the rosti back into the skillet, uncooked side down. Cook for an additional 10-12 minutes until golden brown.

    Serve

    Once both sides are golden and crispy, transfer the rosti to a cutting board. Cut into wedges and serve warm with sour cream on the side.
