Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the egg into it. Gradually add water while mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Cook the Potatoes

    Peel and chop the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and mash them in a bowl.

    Prepare the Filling

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Mix the sautéed onions with the mashed potatoes, shredded cheddar cheese, salt, and black pepper until well combined.

    Roll Out the Dough

    On a floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter (about 3 inches in diameter) to cut out circles.

    Place a tablespoon of filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal tightly. Use a fork to crimp the edges for extra security.

    Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

    In a skillet, melt the remaining 4 tablespoons of butter over medium heat. Add the boiled pierogi and fry until golden brown on both sides, about 3-4 minutes per side.
