Patty Preparation

    Prepare the Meat Mixture

    In a large bowl, combine the Mangalitsa pork shoulder and pork fatback. Use a meat grinder to grind the meat together until finely ground.

    Add Seasonings

    Add minced garlic, fresh thyme, salt, and black pepper to the ground meat mixture. Mix thoroughly until all ingredients are well incorporated.

    Form the Patties

    Divide the meat mixture into two equal portions and shape them into burger patties, about 1 inch thick.

Cooking the Patties

    Preheat the Grill or Skillet

    Heat your grill or a cast iron skillet over medium-high heat until hot.

    Cook the Patties

    Place the patties on the grill or skillet. Cook for about 5-6 minutes on each side, or until the internal temperature reaches 160°F (71°C).

    Add Cheese

    In the last minute of cooking, top each patty with a slice of sharp cheddar cheese and cover to melt.

Assembling the Burger
