Method

Soup Preparation

  1. 1

    Prepare the Vegetables

Wash and clean the leeks thoroughly to remove any dirt. Slice the leeks into thin rounds. Peel and dice the potatoes into small cubes. Peel and chop the onion and garlic.

  2. 2

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion and leeks, and sauté for about 5-7 minutes until they are soft and translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 3

    Add Potatoes and Broth

Add the diced potatoes to the pot and stir to combine. Pour in the vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the potatoes are tender.

  4. 4

    Blend the Soup

Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender. Be cautious when blending hot liquids.

  5. 5

    Add Cream and Seasonings

Return the blended soup to the pot if using a blender. Stir in the heavy cream, salt, black pepper, and thyme. Heat the soup over low heat for another 5 minutes, allowing the flavors to meld.

  6. 6

    Serve

Taste and adjust seasoning as needed. Serve the soup hot, garnished with fresh herbs if desired.
