    Prepare the Meatball Mixture

    In a large bowl, combine ground beef, ground pork, Parmesan cheese, bread crumbs, egg, minced garlic, chopped parsley, salt, and pepper. Mix until all ingredients are well combined.

    Form the Meatballs

    Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Set aside.

Soup Base

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Garlic

    Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Broth and Seasonings

    Pour in the chicken broth and add bay leaves, salt, and pepper. Bring the mixture to a boil.

    Stir in the chopped spinach and simmer for another 5 minutes until the spinach is wilted.

    In a separate pot, bring salted water to a boil. Add the acini di pepe or small pasta and cook according to package instructions until al dente. Drain and set aside.
