Preparing the Beef
- 1
Season the Beef
Rub the beef roast all over with salt, black pepper, garlic powder, and onion powder.

In a large skillet, heat olive oil over medium-high heat. Add the seasoned beef roast and sear on all sides until browned, about 3-4 minutes per side.
Making the Broth
- 3
Combine Ingredients
In a slow cooker, add the beef broth, Worcestershire sauce, dried thyme, and bay leaves. Stir to combine.
- 4
Add the Beef
Place the seared beef roast into the slow cooker, ensuring it's submerged in the broth. Cover with the lid.
Cooking the Beef
- 5
Slow Cook
Cook on low for 6-8 hours or until the beef is tender and easily shreds with a fork.
Preparing for Serving
- 6
Slice the Bread
While the beef is cooking, slice the French bread or baguette in half lengthwise.

Once the beef is done, remove it from the slow cooker and shred it. Place the shredded beef on the bread, add provolone cheese on top, and place under the broiler for 2-3 minutes until the cheese is melted.
Serving the Dish
- 8
Serve with Broth
Serve the sandwiches with a small bowl of the broth for dipping. Optionally, garnish with fresh parsley.
