Eggs

Method

Preparation

  1. 1

    Boil the Eggs

Place the large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan, remove it from heat, and let it sit for 12 minutes.

  2. 2

    Cool the Eggs

After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This will make them easier to peel.

  3. 3

    Peel the Eggs

Once cooled, carefully peel the eggs under running water to remove the shell without damaging the egg white.

Making the Filling

  1. 4

    Prepare the Egg Yolks

Cut each egg in half lengthwise and gently scoop out the yolks into a mixing bowl. Set the egg whites aside.

  2. 5

    Mix the Filling

Mash the egg yolks with a fork, then add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika. Mix until smooth and creamy.

  3. 6

    Add Fresh Herbs

If using, finely chop the fresh chives or parsley and fold them into the filling mixture.

Assembly

  1. 7

    Fill the Egg Whites

Using a spoon or pastry bag, carefully fill each egg white half with the yolk mixture, heaping it slightly.

  2. 8

    Garnish

Sprinkle a little paprika on top for garnish and add extra chopped herbs if desired.

Serving

  1. 9

    Serve and Enjoy

Arrange the deviled eggs on a platter and serve chilled. Enjoy your delicious deviled eggs!
