Prepare the Arepa Dough

Mix the Dough
In a large mixing bowl, combine the pre-cooked cornmeal, warm water, and salt. Stir until a dough forms, ensuring there are no lumps. Let the dough rest for about 10 minutes to hydrate.

Shape the Arepas
After resting, divide the dough into equal portions (about 8-10 pieces). Roll each piece into a ball and then flatten it into a disc about ½ inch thick.

In a medium bowl, combine the mozzarella cheese, cream cheese, chopped cilantro, and jalapeño (if using). Mix well until the ingredients are evenly distributed.

Take one of the flattened arepa discs and place about 2 tablespoons of the cheese filling in the center. Fold the arepa over to encase the filling and pinch the edges to seal tightly. Repeat with the remaining discs and filling.

In a large skillet, heat the oil over medium heat. Once hot, add the stuffed arepas (in batches if necessary) and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.
