    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Sauté the Mushrooms

    In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Mushrooms

    Add the sliced mushrooms to the skillet, season with salt and black pepper, and sprinkle in fresh thyme. Cook for about 5-7 minutes until mushrooms are softened and browned. Remove from heat and let cool.

    Prepare Brie

    While the mushrooms cool, cut the Brie cheese into wedges or small pieces, discarding the rinds if desired.

Assembly

    Roll Out Pastry

    On a lightly floured surface, roll out the puff pastry sheets to about ¼ inch thickness.

    Add Filling

    Place half of the sautéed mushroom mixture in the center of one pastry sheet. Top with half of the Brie pieces.

    Cover with Pastry

    Fold the pastry over the filling to create a pocket. Seal the edges by pressing with a fork or by crimping with your fingers.

    Repeat for Second Pocket

    Repeat the process with the second pastry sheet, the remaining mushrooms, and Brie.

Baking

    Prepare Egg Wash

    In a small bowl, whisk together the beaten egg and water.

    Gently brush the egg wash over the top of each pastry pocket for a golden finish.

    Place the pastry pockets on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
