Method
Prepare the Vegetables

Chop the Vegetables
Dice the zucchini, onion, red bell pepper, yellow bell pepper, and summer squash into small, bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced vegetables, salt, and black pepper. Sauté for about 8-10 minutes until they are tender.
Make Guacamole

Make Spicy Mayo

Mix Spicy Mayo
In a small bowl, combine mayonnaise and Sriracha sauce. Stir until well blended.
Assemble Tacos

Warm Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable.

Fill Tacos
Place sautéed vegetables into each tortilla. Top with guacamole and a drizzle of spicy mayo.

Serve immediately with additional lime wedges if desired.
