Prepare Tuna Tartare

Cut the Tuna
Dice the fresh sushi-grade tuna into small cubes and place it in a mixing bowl.

Mix the Ingredients
Add soy sauce, sriracha sauce, sweet paprika, chopped scallions, and sesame oil to the bowl. Gently mix to combine all the ingredients.

Chill
Cover the bowl with plastic wrap and refrigerate for about 15 minutes to allow the flavors to meld.
Prepare Crispy Dough

Heat Oil
In a deep frying pan, heat vegetable oil over medium-high heat.

Fry Wonton Wrappers
Once the oil is hot, carefully add the wonton wrappers one at a time. Fry until golden brown and crispy, about 1-2 minutes per side.

Drain
Remove the crispy wontons from the oil and drain on paper towels.
Assemble

Place a spoonful of the chilled tuna tartare on each crispy wonton and serve immediately.
