    Prepare the Chimichurri

    In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, red pepper flakes, oregano, and a pinch of salt and black pepper. Slowly drizzle in the olive oil while mixing until well combined. Set aside to let the flavors meld.

    Prepare the Steak

    Preheat your grill to high heat. Pat the picanha steak dry with paper towels, then season generously with kosher salt and black pepper on both sides.

    Grill the Steak

    Place the steak on the grill and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Rest and Slice

    Once cooked, remove the steak from the grill and let it rest for 10 minutes. After resting, slice the steak thinly against the grain.
