    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the whole wheat elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the diced carrots, red bell pepper, and broccoli florets. Cook for about 5-7 minutes until vegetables are tender.

    Combine Ingredients

    Add the cooked macaroni and chopped spinach to the skillet with the sautéed vegetables. Pour in the low-fat milk and stir until combined.

    Add Cheese and Seasoning

    Sprinkle the shredded reduced-fat cheddar cheese over the mixture. Stir until the cheese melts and everything is well combined. Season with salt and black pepper to taste.
