Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, continuing to cook and stir until the mixture thickens.

Add the Cheese

Remove the pot from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted and smooth. Season with salt and black pepper.

Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce, stirring until the pasta is fully coated.

Prepare for Baking

Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish. Sprinkle the top with bread crumbs and paprika.

Bake

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Remove from the oven, let cool slightly, and serve warm.
