    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has rested, fold the vinegar mixture into the rice and let cool.

    Marinate the Octopus

    In a bowl, combine the sliced octopus with soy sauce and let it marinate for at least 30 minutes.

    Form and Fry the Rice

    Once the rice has cooled, form it into small rectangular or square cakes. Heat vegetable oil in a frying pan over medium-high heat. Fry the rice cakes until they are golden and crispy on both sides, about 3-4 minutes per side.

    Assemble the Dish

    Place the crispy rice cakes on a serving plate. Top each cake with marinated octopus slices, drizzle with truffle oil, and garnish with sliced scallions and sesame seeds.
