Pork Chashu, black Garlic oil, bamboo shoots, wood ear mushrooms, scallions, soft boiled egg. Normal or Spicy *Ramen can be served with cooked noodles (best if eaten within 30 mins) or as a meal kit with uncooked noodles (will need to boil noodles to eat for best results)

Prepare the Pork Chashu
In a pot, combine pork belly, soy sauce, mirin, sugar, and enough water to cover the pork. Simmer on low heat for about 2 hours until tender, then let it cool in the broth.

Make the Black Garlic Oil
Heat black garlic oil in a small pan over low heat for a few minutes to infuse the flavor.

Prepare the Noodles
Cook noodles according to package instructions. Drain and set aside (if using fresh noodles, aim to cook just before serving).

Assemble the Ramen
In a bowl, place cooked noodles, sliced pork chashu, bamboo shoots, wood ear mushrooms, and halved soft boiled eggs. Drizzle with black garlic oil and add scallions on top. For spicy ramen, drizzle chili oil to taste.
